They have the ability to undergo a physiological process called Crassulacean Acid Metabolism (CAM). This allows them to open their stomata (tiny pores on the leaf surface) at night, when the air is cooler and more humid. It helps them to minimise water loss through transpiration. Then during the day, they keep their stomata closed to conserve water. So clever!
